Tasty Garlic Chicken

Ingredients

  • Large boneless chicken breasts, one 8 to 10 oz breast per person (clean away any bone fragments or cartilage as you normally would)
  • Extra-virgin olive oil
  • Kinder's Lemon Pepper (a salt-free lemon pepper; it does contain a little sugar, and that's fine)
  • Garlic powder
  • Smoky paprika
  • Grated Parmesan cheese

Method

Preheat the oven to 350°F. Line an old baking sheet (a cookie sheet works well) with aluminum foil. The chicken cooks uncovered the entire time, so leave the pan open the whole way through.

Place the chicken breasts on the foil, evenly spaced, allowing one 8 to 10 oz breast per person. Lightly tuck the thin portion of each breast underneath itself so the whole breast sits at about the same thickness as it rests on the foil.

Lightly coat each breast with extra-virgin olive oil. Sprinkle each breast completely with Kinder's Lemon Pepper, then lightly sprinkle garlic powder across every breast, followed by an even application of smoky paprika.

Once the oven has reached 350°F, place the chicken on the middle rack uncovered and set a timer for 40 minutes. Do not cover the chicken at any point.

At 40 minutes, check the internal temperature at the thickest portion of one breast. It should be around 140°F. Take it out and cover each breast generously with grated Parmesan cheese, then return the chicken to the oven, still uncovered, for another 10 minutes, until the internal temperature reaches 160°F to 165°F.

Remove and enjoy.
